Job Description

Join us for an exciting new Japanese restaurant, located right by Little Island, and be a key player in crafting unforgettable culinary experiences for our guests.

Position Summary:

The Sushi Chef at MIRU plays a lead role in delivering an exceptional and artful sushi experience, upholding traditional techniques with modern precision and presentation. Inspired by world-class standards such as Nobu, this position demands mastery of fish handling, knife skills, and plating, as well as strong leadership and team coordination within the sushi bar.

Tasks/Responsibilities: 

  • Lead daily sushi bar operations with a focus on consistency, quality, and presentation.
  • Maintain expert knowledge of all sushi-grade fish, seafood products, and seasonal offerings.
  • Execute complex cuts and preparations, including sashimi, nigiri, maki, and specialty rolls.
  • Maintain all HACCP food safety, sanitation, and storage standards.
  • Train, mentor, and supervise Sushi Cooks and support staff.
  • Coordinate with the Executive Chef on specials, purchasing, and inventory.
  • Ensure the sushi counter and tools are impeccably clean, organized, and stocked.
  • Engage with guests when appropriate, representing the MIRU brand with hospitality and professionalism.
Qualifications
  • Minimum 5 years of experience in a high-volume sushi-focused kitchen.
  • Expert knife skills and full knowledge of sushi and Japanese culinary techniques.
  • Previous experience in luxury, fine dining, or Nobu-style restaurants preferred.
  • Ability to thrive in a fast-paced environment while maintaining attention to detail.
  • ServSafe certification or equivalent food handler’s license required.
